Try it and you’ll be surprised how versatile cauliflower may be. It is an excellent source of phytonutrients like vitamin C, folic acid and vitamin K. Also, it contains very little carbs and is low-fat food with very little calories.
– 1 medium size cauliflower
– 100 grams of parmesan
– 2 eggs
– 1 cloves of garlic
– 2 tablespoons of olive oil
Clean cauliflower, remove all the dirt and bad parts if any. Cook cauliflower and smash it into a puree. Leave it to chill before you add eggs otherwise they’ll coagulate. Then season the cauliflower with salt and pepper and mix in finely chopped garlic, olive oil, parmesan and eggs. Stir well until it thickens. Make gnocchi using your hands or/and a spoon, whichever way is easier for you.
Roast gnocchi in the oven preheated to 200°C for about 20 minutes. Cauliflower gnocchi are done when they get goldish color.
