Among the endless recipes for muffins this is one that tastes divinely and smells like heaven as well. The recipe has all the healthy ingredients so there is no reason to skip it.
- 2 eggs
- 1 dl of firm yoghurt
- 200 g of ground almonds
- 1,5 tablespoon of psyllium powder
- 25 g of melted butter
- a pinch of salt
- one teaspoon of baking powder
- some stevia powder
- one bourbon vanilla
- lemon zest and juice (1 lemon)
- orange juice (1 orange)
Whip eggs and add other ingredients following the recipe. Leave the mixture to sit for a while and than pour it into greased muffin cups. Bake at 200ºC for about 15 – 20 minutes.
