Recipe for fit pancakes:
In a bowl mix 40 g of buckwheat bread, 5 g of dark cocoa or melted dark chocolate, 200 g of egg whites (roughly 4 eggs), 10 g of melted butter, 1 teaspoon of baking powder, vanilla flavor, cinnamon and grated lemon and orange crust. Add sweetener of your choice paying attention it is healthy such as stevia powder.
Mix dry ingredients first and then blend it with the wet ones. Stir well until homogeneous. Bake on a non-stick frying pan, best on teflon.
Preheat the pan before baking pancakes. Make sure they are done in the middle.
You can pile up pancakes and topp them with maple syrup, wild berries or a homemade marmelade.
Why buckwheat flour?
Buckwheat flour is gluten-free and an excellent alternative for anyone who avoids gluten for some reason. However, this flour can be lighter and dark in color, and the darker it is, more nutrients it contains. It is full of minerals and also a fiber-rich food, meaning it prevents opsitpation and is easy to digest, thus a good choice for children and older people. Besides, buckwheat flout reduces glucose level in blood so even diabetics can consume it. In addition, some argue buckwheat flour reduces cancer risk.
