Quiche (French pie) is a very popular dish. It doesn’t take too much long to prepare and other than ingredients for dough you can literally add whatever ingredient you like or is currently available to you.
This combination is very delicious and healthy since it contains zucchini and salmon, a popular source of omega 3 fatty acids and proteins.
Ingredients for 4 people:
– integral flour – 55 g
– plain flour: 90 g
– butter: 120 g
– brandy: 1 teaspoon
– zucchini: 400 g
– smoked salmon: 100 g
– eggs: 3 kom.
– cream: 1 dl
– grated parmesan: 50 g
– salt and pepper
- Put 70 g of plain flour and 55 g of integral flour on the countertop and form a pile. Add some salt and 100 g of cut butter in the middle of the flour pile. Make a dough using your hands while adding brandy and one tablespoon of cold water and knead until the dough becomes smooth and even. Shape dough into ball, wrap it in plastic paper and leave to sit for an hour in the fridge.
- Wash zucchini, remove the ends and cut into stripes. Slice salmon. Whip eggs in a bowl and add cream and parmesan, season it and mix in zucchini and salmon.
2. Divide dough into 4 parts and roll it very thin. Grease molds for the quiche and cover it with the dough. Pierce the dough with a fork or a toothpick and spread the filling.
- Bake in the oven preheated to 200°C for 35 minutes and serve.
This dish is great because it is also delicious cold.
