Barely is one of the oldest cultivated cereal grain in Europe. It is highly nutritious, full of vitamins and minerals as well as fiber, crucial for keeping healthy peristalsis. Barley also contains unsaturated fatty acids and in combination with eggs makes a complete dish which meets all energy and nutritional needs one needs.
Ingredients:
– 60 g of barely
– 4 eggs
– 50 g of boiled corn
– 50 g of fresh red or yellow pepper
– 20 g of smoked turkey ham
– salt, pepper
– a little bit of vegetable oil
Preparation:
Cook barely remembering that it’ll take less time for cooking if you leave it in water over night to soak and soften. Cut the ham and pepper into cubes and fry together until pepper softens and ham becomes crispy. Put them aside. Whisk eggs and season the way you like and be free to be generous with cayenne or hot chilli pepper if spicy is the style you go for. Throw eggs in a cold pan and scatter other ingredient on top. Fry 2 -3 minutes on each side and have a blast!
A healthier version of this recipe would not include egg yolks, only whites but in that case you’ll need more eggs. You can freeze yolks and use it for something else, delicious creams perhaps. In any case, you’ll love this dish.
