We bring you an excellent vegan tartar sauce recipe:
Ingredients for tartar sauce:
- 200 g of zucchini
- 400 g of asparagus
- 2 tablespoons of white wine vinegar
- 4 tablespoons of extra virgin olive oil
Take a bowl and mix vinegar with a pinch of salt, ground pepper and extra virgin olive oil. Give zucchini a thorough wash and then slice them lengthwise. Carve out the middle and cut it into small cubes.
Remove the woody root ends of asparagus, wash them well and cut into small cubes too.
Then blanche veggie cubes for 2 minutes into salty boiling water. Then put veggies away to lose any excess water and chill. Put all vegetables into a bowl and season with the sauce you’ve previously prepared along with finely chopped chives. You can now serve your veggie tartar sauce!
