This simple and playful recipe will satisfy any gourmet’s palate though it takes some time for preparation. However, it’s worth every second.
Ingredients:
- 1,40 kg of cleaned squid
- 0,20 kg of prosciutto
- 0,10 kg cleaned shrimps with no shell
- 0,10 kg of rice
- olive oil
- garlic
- red onion
- parsley
- white vinegar
- tomato sauce
- salt
- pepper
- spice mixture
Procedure:
Good preparation is half the work.
Clean squids and shrimps. If it is possible, try not to wash them with water in order to preserve their authentic flavor of sea (sea water would be the post choice), but if it is really necessary, you can tap them with paper towel.
Chop squid tentacles and remove shell from shrimps and leave everything aside.
Finely dice red onion and fry gently until transparent. Add finely chopped garlic, squid tentacles, prosciutto cut in small pieces. Stew for another 10 -15 minutes. Add seasons (salt, pepper, finely chopped parsley leaves, white wine) and shrimp tales. When it is almost done, add precooked rice and leave the stuffing to cool for a while.
Stuff squids and seal with a toothpick and then cook in cold water for 5 -10 minutes. Finally, put the stuffed squids in previously prepared tomato sauce and cook for 15 – 20 minutes more.
